Dr. Dawg Opening Still a Few Weeks Away

Owner David Ross hoped to be open by Feb. 1; now he's aiming for the beginning of March.

The wait will be a little bit longer than hoped for those anxious to sink their teeth into a tasty Italian beef sandwich or Chicago-style hot dog while not having to leave the 76th Street shopping corridor.

Dr. Dawg owner David Ross told Greenfield Patch he’s aiming to open his specialty restaurant at the beginning of March. Ross initially hoped his second Dr. Dawg location .

“It’s typical, behind schedule and over budget,” Ross said Wednesday. “But we’re very pleased that we’re in full swing. All the inspections have been done. All the drywall has been hung. We’ve got on a good roll, but it’s going to take the entire month of February to get everything established and moved in and the equipment installed.”

Ross said he plans to have a soft opening before hosting a grand opening sometime this spring. He said newly hired employees — a mix of 25 part-time and full-time staff — will have up to two months of experience and training at his Glendale restaurant by the time the Greenfield location opens. He said chefs and managers from the original location will also help with the Greenfield opening.

“Once we’re really trained and have all the procedures and processes down to a science, we’ll have a grand opening,” he said. “We’re excited to become a part of the community and introduce this unique fare to the people on the southeast side.”
