Cooking: Cranberries

Cranberries are one of only three fruits native to America (the others are concord grapes and blueberries). Cranberries are also a very important part of the economy of Wisconsin. But at the holidays we usually just break out the can of cranberries and that’s it. Tonight you’ll think outside the can and prepare some creative dishes: Cranberry & Wild Mushroom Tart served with Brussels Sprouts with Pancetta & Cranberries, Cranberry Chicken Sliders with Cranberry Aioli & Chunky Cranberry-Beer Chutney and New England Cranberry Pie for dessert. You’ll also receive recipes for Cranberry Wassail, Homemade Cranberry Vodka & Gingered Cranberry Martinis, Cranberry Monte Cristo Strata and more! Class will use cranberry juice, fresh cranberries, dried cranberries and cranberry sauce.
